Grilled Shrimp

Easy and simple protein, delicious with the most salads and a multitude of other side dishes.
Servings: 1-2 people

Ingredients

  • ¼ cup Coconut Milk or Tigernut Milk
  • 1 tbsp Lime Juice
  • 1 clove Garlic, minced
  • 1 tsp Olive or Avocado Oil
  • tsp Sea Salt
  • ½ lb Shrimp, uncooked, peeled and deveined (frozen or thawed)

Instructions

  • Place all of the ingredients in a bag or bowl, stir to mix.
  • Leave in the fridge for 2-3 hours.
  • Heat a grill to medium heat or a grill pan over medium heat.
  • Drain the shrimp, discarding the marinade.
  • Thread the shrimp onto metal or soaked wooden skewers.
  • Place the skewers on the grill or grill pan (may have to be done in batches) and then grill for 2-3 minutes aside, or until the shrimp turn pink.
    If you don't have a grill pan you can simply saute the loose shrimp (not on skewers) in a pan on the stove until no longer pink - about 4-6 minutes.
