Greek Sheet Pan Meal

This is another one that is fantastic oven sheet pan meals that are a mixture of veggies and meat.

Ingredients

  • 1 lb chicken tenders cut into large pieces
  • 1 zucchini diced
  • 1 red onion chopped 1 diced sweet potato, finely diced
  • 1 lemon sliced
  • 1.5 tablespoons greek seasoning
  • 2 tablespoons of olive oil
  • coconut yogurt optional
  • kalamata olives optional

Instructions

  • Preheat the oven at 425 F.
  • Toss the chicken, zucchini, onion and lemon slices with the oil and seasoning.
  • Spread out on a parchment lined backing sheet and bake for 20 minutes.
  • Serve with a dollop of coconut milk yogurt and some kalamata olives.

Notes

If you prefer seafood, cod would also be a great choice with this, but leave the filets whole so they cook approximately the same time as the rest of the ingredients, and perhaps cook it on a separate sheet pan so you can remove it if it’s done after about 15 minutes.
