Creamy Balsamic dressing

This easy and flavorful Creamy Balsamic dressing takes just minutes to make and can be used as a salad dressing, marinade for protein, or even a marinade for vegetables.
Make ahead: Store in an airtight container in the fridge for up to 7 days.

Ingredients

  • 1/8 cup Balsamic Vinegar
  • 1 clove Garlic minced
  • 1 tbsp Coconut Milk or Tigernut Milk
  • pinch of Dried Ginger
  • pinch of Sea Salt
  • 1/2 cup Olive Oil

Instructions

  • Mix ingredients in a small glass jar with a lid or a small bowl. If using the small jar with a lid, put the lid on and shake vigorously for 10-20 seconds to mix everything together. If using a small bowl, whisk the ingredients together with a whisk or a fork.
  • Store in an airtight container in the fridge for up to 7 days.

Notes

To use as a marinade for protein, use ½ cup of the dressing per 1 pound of meat. into a resealable bag and then pour approx ½ cup per 1-2 pounds of meat over the meat and seal the bag. Then massage the bag to coat all sides of the meat. Marinate for at least 20 minutes up to 12 hours before cooking.
This marinade works great on chicken, steak, and pork.
You can also marinate vegetables, which gives them a lovely flavor. Toss quartered onions, zucchini, summer squash, broccoli, or cauliflower with enough of the dressing to coat the veggies. Refrigerate for 3-12 hours before cooking as desired.
Use it also to toss with veggies AFTER cooking - it’s great drizzled over grilled or roasted asparagus, to dip steamed artichokes in, or drizzled over roasted broccoli or cauliflower.
