A Greek Gyro reimagined into a filling, super flavorful bowl. Every time I make this my kids ask me to make it again as soon as possible! The flatbreads are definitely optional on this, but make a fun addition.Make ahead: If you make the meat in the oven a day or two ahead of time (or make and freeze the slices) it makes this bowl super quick to make at time of serving. I typically double the gyro meat recipe and make 2 loaves - one for serving that week and one I slice and keep in the freezer for quick meals later. If you do the flatbreads you can also freeze them and take them out as needed as well.Serves: 4-6 people
Prepare and cook the gyro meat according to the instructions in the recipe (just follow the directions for the meat in that recipe)Once that's cooling, prepare the Tzatziki sauce, cucumbers, flatbreads if using, and condiments. Also get the cauliflower rice ready to cook (you do not have to include the coconut and cilantro in that recipe, just make the rice)
Cook the cauliflower rice at the same time you brown the meat slices, then divide the ingredients between the bowls and serve.
