Tzatziki Sauce

A tangy, Greek sauce, Tztaziki can be used on many types of dishes. Use a dipping sauce for raw veggies, over proteins like fish, grilled chicken (especially the Greek chicken), or in a gyro-inspired wrap or bowl.

Make Coconut-free: A traditional Tztazki sauce is pretty thick, however, you can use Tigernut Milk to make a thinner sort of sauce instead. It'd be more like a salad dressing than a dipping sauce, but it would still be great on a gyro bowl.
Make ahead: This sauce can be made up to 5 days ahead of time and stored in the fridge.

Notes

Can't find coconut cream? Usually you can refrigerate a can of full-fat coconut milk overnight and then the cream will be solid on the top. However, sometimes AIP-friendly coconut milk (aka, the type without guar gum) doesn't solidify, so you can try using coconut milk mixed with a bit of palm shortening to create a creamy consistency instead. Or just use coconut milk and it'll be pretty thin, more like a salad dressing rather than a creamy, traditional-style Tzatziki sauce.
